Having sourced a fuel tank and most of the fairings, I'm getting close to changing the color from atomic silver to all black, what would you guys recommend vinyl wrapping or using rattle cans and getting half a decent finish?

Rattle can paint will take a year to cure enough for you to let any solvent touch it. I heard Eastwood makes a rattle can with a catalyzer and it hardens real fast like professionally applied paint. You won't get a mirror finish with rattle canning because there's no way to get the pressure of a spray gun. It will look rattle canned. If you have the patience to polish it smooth, it will probably look professional but I guess I would plan on waiting a year to do that. I've polished a three freshly painted coats on a sprocket using only my fingers and very low abrasion compound and it worked. For clear coat, I would apply a lot of layers so there's plenty there to polish away without going through to the paint layer which is bound to have a wavy, orange peel surface.
Wrap works well for large surfaces. It will be a PITA to stretch it around things like the nose. I've done it with my 3" stripes. Full coverage....I don't think it would be possible. The grill fins??? Forget it.
I'd suggest Plastidip but that will apply to less of a perfect finish than paint. It will look fine if you leave it matt black but it's going to look like a rat bike and it will get scuffed off easily.

The Color-Rite rattle cans work fairly well. Their clearcoat is definitely hard and fuel-resistant. Several coats of clear and lots of wetsanding between coats. See if you can spot the Color-Rite painted parts and the ones with stock paint:
