Mine is 12.3 after it's been sitting for a few days, brand new bike but it sat for a year. Shouldn't it be higher?

Yes. About 12.7/12.8 if well charged. A battery will lose 1% of charge per day. Say 2 weeks go by, that's 15%. A month says 30% down. That's how that goes mixing acid with water called, 'specific gravity.'
A key on and you watch the dash voltage number: remember, that's lights, tail, dash, relays, diodes in the ECU, this is battery voltage here at the dash. Go to the battery posts with a volt meter. Check the battery voltage with key off or key on. See the difference at the dash volt? The volt meter off the battery are equal volts? Well really, just prong the posi meter prong under the red boot and ground the neg meter probe to the clutch cover bolt... You'll get your answers.
