Plumbob My Bog, I suggest you do not remove the subs on a faster moving actuator. She is about as bog-less as it comes. It is all there and you will induce a bog you whip up the main throttle plate running subless. Remember the old days when you took a hand full with the air cleaners off a carb and points bike? You took your front teeth out on the gas cap she bogged so bad.
You want to bring those days back, that is what I am experiencing now. I have the subs locked open. Yes, she is about close to no subs being quick , but if you want that complete performance package, you will knock into some heavy wind if you remove the subs on your particular year model. She is a fast spinning crank and is going to gulp on WOT; where your seat of the pants will tell you that you will want the sub back in just for that reason. You might bruise your lips is an ever so slight lag. I bet Rook would admit he felt the bog and the subs are a much better act. Because I cannot feel any lag, but I sure do on a fast rip, though never with the subs in place on the '08.
What the flies do really is remove the bog. No, if and'z or bogz. Did the early model induce a lag? I think they were chasing more to slow that bog down by bogging for every action there is you know the rest. So, with the GPS and the sub as the tag team to bogging, would you agree it is all about a subsonic move you are sorta stuck in?
So, suck a lung full in right now a few times is open you mouth. Wasn't there a lag before you filled your lungs a whole lot faster? First the bog, then you have to stop she is filled?
OK, I explained what I think the flies really do. WOT say you?

Do it after you get used to instant WOT in first gear. No need to if you're not that kind of crazy.
Your flies are open at 3000rpm. When you are going fast, your out of that range in a wink and that's the last time you're going to be in that zone until you slow way down. The flies out doesn't make any difference in the higher gears. I think they are pretty much open all the time in 4,5,6.

What you have said is true of the G2 bikes.
You have an 07 so will notice a huge increase from idle to 6K rpm. G1 flies open a lot slower so you should get 'em out if you want to really know what your machine was made to do. Get a flies out map to safeguard against lean condition on your G1.
