how difficult is this to perform. How much performance gain do you get and is re-mapping required when you remove them. Can the average joe do the task.

The gain in throttle response depends on the year of manufacture if you're starting with a stock motor. '06 and '07 show the biggest contrast because the opening curve of the secondaries was rather slow. 2nd gen ('08-'11) had more progressive opening curves programmed into their ECUs, so the gains are less. Not really sure about the 3rd gen ('12-present)
The average shade-tree mechanic can remove the secondaries. You can do it with the throttle bodies in situ if you're vey careful and use a strong, magnetic screwdriver. It also helps to heat the screwdriver tip each time you remove a screw (2 in each intake throat) to loosen the locking agent the factory uses to secure the screws.
But it's best and safest to remove the screws and the butterfly plates with the throttle bodies removed from the machine. Be sure to note the positions of the TPS shaft ends if you take them off, although it can be done without doing so. There are wires jammed between them that are difficult to remove and replace without taking off at least one of the TPS sensors.

IMO, you won't feel much change at all after removing flies from 08-12 models. When you get it mapped right, it will be smooth and linear throttle response from idle to 35K rpm.
I rode my 08 with flies out for a year with no problem but I believe some say there is a lean spot in the powerband (probably right at 3.5k where the flies are supposed to open if they are not pulled) and lean is mean as they say. well, I say you will have no issue....I never heard of anyone burning up a piston from pulling flies with or without mapping.
...but as I said, there is not much to be gaineed by pulling on a Gen2 iunless you DO map. I used Autotune to adjust a flies in map that was made for my exhaust on a 2008 ZX-14 and I had very good results compensating for the flyectomy.

Dynojet has maps for flies out, slip-ons, full system, air filter and combinations thereof, or you can have it custom-mapped for your equipment and intended use.

I was tired....thought I editted that. I'm still tired.
3.5 K is what I meant... Many of us notice a little low end hit just when the flies open at about 3.5K and it can be difficult to manage when you need real precise throttle control...or even just taking off from a stop light and leaning into a corner.
