What does taking the butterflies out do for the bike?

Increases the action or the event to happen sooner. Swish your hand thru a vat of molasses. Swish your hand thru water. See that fluid speed flow difference? Something like that as in a different speed event.

Actually, it removes an air flow restriction which exists at lower rpms and gears.
The purpose of slow opening secondary butterflies was to keep all the horsepower and torque from being available in the first part of the throttle at lower rpms and gears. Thus keeping the front end on the ground, for example.
Lots of complaints, pre-2008. Everyone pulled the flies and put piggies on.
From 2008 forward, the ECU opens the secondary butterflies earlier, to the point of making pulling the flies on a 2008+ ZX14 very close to being a waste of time.
If I raced, I'd pull the flies on my 2008, but I don't race, so it doesn't matter.
