For a 7 PSI turbo'd bike, ATP, Harry said that stock timing is ok for his kit at stage 1... mine is setup stage 1.

I have the timing -6.

Do you think changing to OEM timing would make a significant/noticably tellable difference in performance?

Seat of the pants unless you have a dyno. Try stock first then back off on the minus if it wants less advance.

The guy that built my kit said stock timing was fine at 8psi as long as I wasn't land speed racing, and I used premium gas. You'll most likely feel a big gain in performance...especially off boost, by adding that -6 degree's of advance back in. From my research I wouldn't think twice about running stock timing at 7psi.
